Abstract
Purpose
The purpose of this paper is to describe the results of the construct validity by the known-groups method of a Brazilian cooking skills and healthy-eating questionnaire.
Design/methodology/approach
Responses obtained from university students (n=767) for Brazilian-Portuguese cooking skills and health eating questionnaire, surveyed online, were submitted to construct validity comparing two known groups. The t-test was used to compare differences between gender (male and female) and the level of cooking knowledge (high or low) in each measure of the questionnaire. Internal consistency was evaluated by obtaining the Cronbach’s coefficient.
Findings
Women showed significantly higher means than men in all scale measures, except in the self-efficacy for using basic cooking techniques (SECT), where no differences were found. Students classified as having high cooking knowledge and had higher score means in all scales compared to the students with low levels. Internal consistency was adequate for all scales (a>0.70), except for cooking attitude (CA) (a=0.33) and cooking behavior (CB) scales (a=0.59).
Research limitations/implications
SECT likely depends on cooking knowledge, independent of gender, suggesting further examination. Items and structure of CA and CB constructs also need to be examined more deeply.
Practical implications
A validated cooking skills and health-eating questionnaire demonstrated its ability to detect differences between groups, useful to provide data for further interventions.
Originality/value
No available cooking skills questionnaires were found that have been validated by the known-groups method regarding differences between gender and individuals’ level of cooking knowledge, as conducted in this study.

Purpose
Social enterprise plays a pivotal role in helping people and communities. Since the global financial crisis of 2008, there has been an upsurge of social enterprise within a local, national and global context. The purpose of this paper is to explore the debates and issues presented by social enterprise in a very complex globalized world.
Design/methodology/approach
In this paper, the authors apply two geographical case studies: China and India. The purpose for selecting both China and India is their increasing economic super power on the global stage. It is argued that the concept of social enterprise within the geographical context of China and India is significant to their individual economies.
Findings
The concept of social enterprise within the geographical context of China and India is significant to their individual economies and as explored within the notion of “think global, act local” the conceptual debates of place, space and time enables people to take positive action and enable the development of healthy communities.
Originality/value
This paper contributes to the discussion around the definition of the nature of social enterprise and gives concrete examples of the contextually specific nature of the term.

Abstract
Purpose
The purpose of this paper is to investigate the unexplored part of the historical evolution of travel agencies in Spain, from the end of the 20th century to the 21st century. When examining promotion strategies, the study focuses on the change in marketing and public relations strategies based on the incorporation of information and communication technologies and, in particular, the use of the internet.
Design/methodology/approach
This study draws on a qualitative analysis of the different strategies used by traditional agencies and online agencies in Spain from the mid-19th century to the present. This analysis shows how traditional communication strategies survived at the beginning of the 21st century, together with other more innovative ones, while some disappeared, being eliminated by the new online travel agencies, which created a particular conception of marketing and communication. This paper is divided into the following parts: the introduction; the beginnings of travel agency promotion in the 20th century; the evolution of promotion in travel agencies since the late 20th century; communication innovation at the beginning of the 21st century; online travel agencies; and conclusions.
Findings
This study shows that although online agencies did not manage to position themselves with a large turnover, they generated advantages and sharpened their imagination to create a new, more economical advertising model, eliminating the costs of public relations and advertising campaigns. In addition, they allowed clients to have greater independence when making their reservations, while enabling them to monitor the tastes of potential and real clients and add blogs so that consumers could express their degree of satisfaction with the product or services provided by the agency.
Originality/value
The focus of attention is the travel agency sector in Spain and, more specifically, communication. Studies on travel agencies and their marketing have been very scarce and partial, impeding professionals in the tourism sector from having a broad vision to direct their promotional and public relations actions. The originality of this article lies in its making a comparison between two different visions of tourism marketing and, specifically, of travel agencies, that is, the traditional vision and the innovative one. It thus helps all professionals in the sector to value and improve their marketing and communication strategies.

The chapter presents a research base projection onto the situation in England in 2045, using Office for National Statistics (ONS) modelling based on current population reaching the age of 85-years plus. We take three The Archers characters and fantasise about their lives in 2045, Shula and Kenton Archer and Hazel Woolley. Through them, we illustrate three options for care, namely, cared for by family members, buying in care in own home and moving into a care home. The financial aspects of these choices are explored.

The interplay between economic and ecological forces is highlighted against the backdrop of coordination failures in a loosely structured organizational setting.
Findings
It is apparent that powerful bottom‐up forces of economic integration are overwhelming the embryonic machinery hesitantly erected to minimize their adverse effects.
Practical implications
The heavily decentralized model relied upon to manage complex relationships within the Pearl River Delta region needs to be reassessed, with lessons drawn from other parts of the world, notably Europe, which is also confronting friction between the centre and periphery.
Originality/value
The underlying socio‐physical dynamics, fragile organizational façade and crucial policy choices are outlined in a systematic fashion, with intricate linkages carefully pinpointed.

Abstract
Misbegotten, misnamed, antisocial homo oeconomicus is now contrasted with the more human personae of homo oeconomicus honorabilis, the “open”/ “Semi‐economic Man” of Pantaleoni and Marshall, the still arcane homo oeconomicus humanus of Nitsch and Malina, and (most recently) the positivistic (neo‐) homo socio‐economicus of Etzioni et al., which ‐‐in turn – harks back to Smith′s Theory of 1759‐90. Showing the essential identity of modern economics and Aristotle′s oikonomikē, and recognising the ozone layer as pre‐eminent among once‐free but now very scarce resources (chrēmata ) that have to be utilised efficiently and administered prudently, the author joins forces with Herman Daly et al. in proposing an Aristotelian/Biblical homo oeconomus as a “Good Steward” in the spirit of Frigerio′s L′Economo Prudente (1629) and qualitative improvement over the being who has masqueraded as homo oeconomicus. Uniting this prudent conservator and caretaker of our natural endowment with “Homo Faber, the Subject‐creator of Social Economy” of an earlier work yields the antithesis of the veritable homo oeconomicus impudens of Classical‐Neoclassical infamy.
